The best salad ever!

I was shocked at the flavours and yumminess of this salad!

Watercress, mushroom, pomegranate seeds, feta, green apple, mixed seeds, walnuts and blueberry dressing.

Amazing!!

Vegetarian Pizza!

The easiest things in my life are frozen pizza bases (guilty pleasure)

What I used on my pizza today is: Button mushrooms, green peppers, rosa tomatoes, avocado, peri peri sauce, cheese, ground pepper.

Simple! 10 minutes!

Cheesy Eggplant

Super easy super yummy!

Top Eggplant rounds with mozerella, baby rosa tomatoes and spinach and grill in the oven!

In the middle: paneer poppers πŸ™‚ not home made- just baked in the oven

The Best Nachos!

Think of a lasagne, it’s layered right? So why not layer your nachos too! More flavour and more yummyness!

The layers are as follows (from bottom to top):

  1. Doritos (The blue bag-the best) or any preferred nacho chips
  2. Tinned baked beans in tomato sauce, with chilli powder, peppers, tomatoes and onions, simmered
  3. Nacho chips
  4. Grated cheddar cheese and feta cheese
  5. Seasoning if preferred

Just warm it up in the microwave or oven (healthier) so the cheese melts and becomes browned and crispy.

Easy Yummy Guacamole

Did you know that this avo-based dip was created by the Aztecs in the area of Mexico! It is now a favourite in many parts of the world!

Heres how we made it!

  1. Cut ripe avos in half, squeeze out the seed and squeeze out the flesh into a bowl
  2. Mash up the avo in the bowl
  3. Add lemon juice, salt and pepper
  4. Mix and garnish. I used Himalayan salt crystals and pepper, with some sweet pepper bits

It’s really cool to stay natural and also avoid dishes! So why not use the avo shells as bowls? Especially when you’re having guests over!

Comfort Couscous

Couscous originates in North Africa and is made of semolina (a product of wheat).Β This dish can be served cold or warm, and can be a snack, a meal or a side!You can add basically anything to it, according to your preference. This is what I used in my recipe:

  1. Feta
  2. Avocado
  3. Kidney beans
  4. Chickpeas
  5. Peppers
  6. Seasoning of your choice
  7. Rosa tomatoes
  8. Couscous*

*To make couscous is so easy, many people don’t realise this! You just need a 1:1 ratio of boiling water to couscous soaked for less than Β 5 minutes, and viola!

 

Aubergine Bake

Cut some baby aubergines in half, or thinly slice a large aurbergine

Cut up some rosa tomatoes on top

Top with mozerella

Add mixed herbs and drizzle with olive iol

Bake in the oven

What would we do without Cous Cous

Cous cous is literally easier than making a sandwich! My 4 year old niece does it. You can too

Use an equal amount of cous cous, as boiling water. Let it soak for 3 minutes, season and stir.

Roast some veggies in the oven. I used butternut, baby marrow, onions and pepper.

Add some sliced avos and lemon juice.

And there you have it! Mix it up and enjoy warm or cold like a salad πŸ™‚
